Cooking up tablitas at the tailgate

Sean Koehler of Twisted Skillet shows Kirbe Schnoor how he grills up perfectly simple tabilitas.

It is a Mexican short rib, but the way Koehler goes about cooking it, it is similar to a Korean BBQ. He cooks it hot and slow, and uses brown sugar to make it caramelize.

Twisted Skillet’s menu is inspired by hill country and ranch cuisine, but with a modern twist!

They also make it a priority to take the talents of local farmers, rancher, chefs, cheesemakers, winemakers, brewers, distillers, and more to create their amazing dishes. Their menu utilizes local and seasonal ingredients.
