INGREDIENTS
3 firm Pink Lady apples, peeled and cut into matchsticks
3 firm Red Pears, peeled and cut into matchsticks
5 cups Napa Green Cabbage, shredded
5 cups Radicchio, shredded
3 Tablespoons fresh Thyme
1/4 cup Lemon Juice
1/2 cup Gorgonzola crumbles
1/2 cup Chopped Pecans
Vinaigrette
1/4 cup rice Vinegar
1/2 cup Olive Oil
1 Large Shallot, minced
1/2 teaspoon Kosher Salt
Mix all together in a separate bowl.
Toss apple and pear matchsticks immediately in lemon juice to preserve color. Combine all ingredients. Toss with Vinaigrette just before serving.
